Fruit filling is one of those ingredients every industrial bakery depends on, yet few buyers know exactly what separates a reliable, oven-stable filling from a cheap sauce that breaks down in the oven. This guide explains what pie and pastry fillings are, how they are manufactured, and what to check before you sign a supply contract.
What is a fruit filling?
A fruit filling is a prepared mixture of fruit, sugar, water and a starch system, cooked to a specific Brix (soluble solids) and viscosity so it can be deposited into cakes, pies, tarts and breads — either before or after baking. Unlike jam or preserve, a filling is engineered for application performance: it must hold together during baking, resist water separation (syneresis), and keep fruit pieces intact and visible.
Why industrial bakeries buy ready-made fillings
- Consistency. Every batch arrives with the same Brix, pH and pulp content, so your finished product tastes the same in every store.
- Efficiency. No in-house cooking lines; the filling goes straight into depositor hoppers.
- Food safety. A certified manufacturer cooks, fills and sterilises under HACCP control — far easier to audit than a scratch kitchen process.
5 specifications to check before buying
1. Pulp content. Look for 45–55% real fruit. Below that you are buying sweet sauce with fruit flavour.
2. Brix. 30 Brix is the industry standard for bakery fillings; lower Brix means shorter shelf life, higher means heavier sweetness.
3. Oven stability. Ask whether the filling resists boiling out and water separation during baking — this comes from the starch system and the cooking process, and it is the single biggest quality difference between suppliers.
4. Whole-fruit vs chopped. Whole-fruit fillings deliver visual impact on tarts and cake surfaces; chopped fillings spread evenly inside layers and breads.
5. Certification. For export markets insist on BRC, HACCP and FDA registration — supermarkets in Europe and North America will audit your supply chain, not just your bakery.
